Hearty Chili Recipe

Ingredients

  • 1 lb 80/20 or 85/15 beef

  • ½ lb pork

  • ½ lb chicken or turkey

  • 3 garlic cloves

  • 1 small onion diced

  • 2 carrots, chopped

  • 2-2 1/2 tbsp chili powder

  • 1 tbsp paprika powder

  • 1 tbsp ground cumin

  • 2 teaspoons salt

  • 2 teaspoons pepper

  • ¾ tbsp garlic powder

  • 1/2 tbsp onion powder

  • 1 cup brown, green, or tri-blend lentils

  • 2 bell peppers, diced

  • 1- 28 oz can of fire-roasted crushed tomatoes

  • 1 -15 oz black beans, rinsed and drained

  • 2-3 cups chicken broth, as needed

  • Salt and pepper to taste

Steps:

  1. Heat a large, heavy pot or Dutch oven over medium-high heat. Add the meat. Cook for 6–8 minutes, until brown and break the meat into small pieces.

  2. Add the minced garlic, diced onion, carrots, and bell peppers. Cook for 6–8 minutes, stirring occasionally, until they begin to soften.

  3. Add 1 teaspoon of salt and the rest of the seasonings. Stir constantly for 30–60 seconds to evenly coat and toast the spices.

  4. Stir in the crushed tomatoes, rinsed dry lentils, and 2 cups chicken broth. Bring to a gentle boil.

  5. Reduce the heat to low, cover partially, and simmer until the lentils are tender:

  6. Stir occasionally and add more broth or water if the chili becomes too thick before the lentils finish cooking.

  7. Add the black beans during the final 10 minutes. Simmer uncovered until the chili reaches your preferred thickness.

  8. Taste and adjust with additional salt, chili powder, or broth. Better the next day after the flavors have settled.

Notes:

  1. Use any type of ground meat you’d desire. For a more rich flavor, use beef and pork, and chicken and turkey for a lean meat preference.

  2. Adjust seasonings as needed and you may need to add more chili and cumin at the end but over time the flavors will blend better together.

  3. Optionally, feel free to add in zucchini, sweet potato, corn, etc. for more nutrients.
